The Selection Process
It is with great care and a tremendous amount of knowledge that we, along with our Mexican team select our coffees. Our coffees are 100% Mexican in origin. The majority of our coffees are sourced from the state of Veracruz. However, we also source coffees from the states of Puebla, Oaxaca, and Chiapas. All our coffee beans are cultivated 1000m above sea level or higher. They are 100% arabica beans and are selected at the peak of their ripeness. However, not all arabica beans are equal. Just because a coffee boasts arabica beans does not automatically mean that they are of high quality. There are various varieties of arabica beans. We are committed to sourcing the varieties of beans that have proven to produce unequalled “World Class” flavors and aromas in each and every cup of coffee.

The Preparation and Roasting Process
The majority of our coffee beans go through what is called a “washed” process where the coffee beans are hulled, left in water for a short time of fermentation, and then finally dried in their own parchment covering before being separated into raw green coffee beans. These green beans then go through a selection process where only the beans of the highest quality and uniformity are selected for roasting. Our coffees are carefully roasted by master roasters at a medium to medium dark roast to insure that the client receives an intense coffee experience without losing any of the unique flavors and aromas that specialty coffees are famous for producing.
